Who does not want to have easy dinner ideas at hand? I'm at home 24/7, and yet the thought of making dinner does get to me, because of unpreparedness - well, I'm deciding to be pro-active about it, and sharing this baked paprika Chicken tenders dish with you (with many more ideas to come). This chicken recipe can be accompanied by whatever main food that fits your family's eating lifestyle e.g rice, salad, or veggies. You can even sub the chicken with a plant-based food like tofu, and still be able to enjoy it.

What you'll need to make this Baked Chicken tenders' recipe?

To serve 3-4 people, you will need.....

  1. 1 lb (453g) chicken tenders (or breasts) - cut into thumb sized strips
  2. 1/2 cup of honey (or syrup)
  3. 1/3 cup dark soy sauce
  4. 3 tablespoons of cooking oil (preferably olive oil)
  5. 1 tablespoon of paprika
  6. 2 tablespoons of curry powder
  7. Salt and pepper to taste
I love cooking everything with curry powder, but if you are not into it, you can reduce it for this recipe (to 1 tablespoon). Give the recipe a chance though and go all the way.

Low-carb honey substitute

The sweetness from the honey or syrup balances the taste from the combines sauces and spices. On occasion, I've sprinkled some brown sugar to achieve the same thing.However, this is not always conducive for everyone. If you prefer this recipe to be low in carbs and sugar, sprinkling sweeteners instead will do the trick e.g monk fruit, and stevia. Syrup tends to have lower carb content though, when compared to honey.

What does paprika do for chicken?

I sat with Paprika for months in my cupboard, until my niece challenged me to use more of it. Truth be told, I was not aware of its benefits when cooking chicken. In fact, Paprika goes with just about any savory foods. It is a must have for your spice cupboard. Paprika gives the chicken (or any food), a nice visual appeal - while subtly enhancing its flavor as well.

Making the Baked Chicken Tenders

1. Preheat your oven at 200°C, and gather all your ingredients.
2. Slice the chicken tenders (breasts) into thumb sized slices or strips.
3. In a separate bowl, combine all the condiments (wet and dry) - except for the salt and pepper.
4. Add the chicken and mix -  then season with salt and pepper
5. Let the chicken marinate for about 15 minutes.
6. Transfer the mixture to a roasting pan (spread evenly so that there is only one layer)
7. Bake for 20 minutes - then remove from oven.
8. Garnish with chopped spring onions and and serve with rice/veggies/salad.

The only labor intensive process in this recipe is cutting the chicken into strips - that's just about it. Chicken breasts and tenders cook very quickly, so you must be cautious not to overcook this dish. They are not easy on the mouth when all dry.
