Midweek dinners are a struggle, for both parents who work in the home, and outside the home. It does not mean that we eat junk food though, hence I'm on this path to experimenting with as many easy dinner ideas as is possible. Your food can be decent and comforting at the same time. it's definitely the case with this beef-stir fry with rice meal. I also like that the vegetables are cooked with the meat, helping get those fussy eaters to down them easily.

Don't let the beef cause you anxiety - it takes much less time to cook because it is thinly sliced.

What you need for 3-4 servings:

  • 1/2 lbs (227 grams) of beef ( sirloin cut) - thinly sliced (sukiyaki style)
  • 1/2 cup of honey
  • 1/2 cup soy sauce
  • 4 spoons of curry powder
  • 4 spoons of oil
  • 1 tsp of black pepper
  • 1 red onion, sliced
  • 3 medium bell peppers (1 of each color) - sliced into strips
Needless to say, you will need cooked rice to serve with this beef stir-fry and rice recipe.  If you are being carb conscious, then cauli-rice or veggies will work just fine.

Your honey, soy sauce, and curry powders can be later put to good use by making this baked chicken tenders recipe. I'm the kind of person who prefers versatile recipe ingredients. It also keeps my spice cabinet organized.

Step by step recipe for beef stir-fry with rice - easy and quick midweek dinner idea.
  1. Gather all your ingredients (while also cooking rice on the side).
  2. Marinate (for 15 minutes)  the  beef in a marinade made of the soy sauce, honey, curry powder, and pepper.
  3. Use half the oil to sautee the bell peppers and red onion until cooked - but still crunchy. This should take a few minutes. Remove from the pan and set aside once done
  4. In the same pan, add the remaining oil and cook the beef (together with the marinade) for 3-5 minutes (until the sauce thickens, and the beef is thoroughly cooked). Turn off the heat.
  5. Add back the cooked peppers and onion, and let them mix with the marinated beef to bring the flavors together.
  6. Serve on  hot steamed rice, and enjoy!
There you go! An almost one pot meal for those busy midweeks.

What is the best beef to stir-fry?

The above recipe will cook quicker because I used the correct beef. According Broad Brook Beef - tender beef cuts, like sirloin,tri-tip, rib eye, top loin (strip), tenderloin, shoulder center (Ranch Steak), shoulder top blade (Flat Iron) and shoulder petite tender are easy to cut into strips - and once done, they cook faster.

How do you tenderize stir-fry steak?

If you are still concerned that you meat is not tender enough, a 15 minute stint in a solution of baking soda and water will tenderize it and keep it moist when cooked.
